Amu’s Banana Oatmeal Muffins [Recipes]

In this recipe I literally baked what my mama gave me!

Whenever I go to visit my mom (or Amu as I like to call her), she hands me a huge bag of groceries which always inevitably includes a bunch of bananas. I can never finish these bananas in time so I had to figure out how to put them to good use. I have come up with a fool-proof and flexible recipe that will provide you with delicious banana muffins! You’ll have a quick and easy breakfast or snack!

Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 1 cup oats
  • 1/2 cup of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 cup mashed bananas (about two bananas give or take)
  • 1/2 cup of chocolate chips (optional but recommended)
  • 1/2 cup of chopped walnuts (optional but recommended)

Directions:

  1. Preheat oven to 400 degrees.
  2. Mix all your dry ingredients in a bowl (except chocolate chips and walnuts).
  3. Mix all your wet ingredients in a bowl.
  4. Stir the flour mixture into the banana mixture.
  5. Fold in your walnuts and chocolate chips – these add great texture to your muffins so I highly recommend it!
  6. Line a 12 cup muffin pan with paper baking cups and pour batter evenly among the cups.
  7. Bake at 400 degrees for 18 minutes or until lightly browned.
