Dark Chocolate Chip Oatmeal Cookies [Recipes]

Nothing like freshly baked cookies and a glass of milk on this snowy New York evening! After a long day of work, and a dreadful trek home, I got my apron on, baked up a fresh batch and ate them while watching Gossip Girl reruns in my underwear (livin’ the life, I know)! [Ed. Note: Just found out Dan, Vanessa and Hillary had a threesome – Puke! Everyone involved, could do better, Amaright?!]

Ingredients:

1 cup Shortening

1 cup of brown sugar

1 cup of sugar

2 whole eggs

1 teaspoon of pure vanilla extract

1 and 1/2 cup of Flour

1 teaspoon of salt

1 teaspoon of baking soda

3 cups of quick-cooking oats

1/2 cup of semi-sweet dark chocolate chip minis

First, mix together the shortening with both sugars and set aside.  Second, beat the eggs and vanilla together, and add to the shortening and sugar mixture.  Then carefully combine the flour, salt and baking soda. It should look something like this.

Next, add the oats and dark chocolate chips and mix well.

[Ed. Note: This much dough will make more than 2 dozen cookies, so I suggest storing half of the dough in the freezer (rolled into a log and wrapped in plastic and then ziploc-ed) for another snowy day.]

Place round heaping teaspoons of the dough on a cookie sheet and bake at 350 degrees for 10 minutes.
