Hello Dolly Cookies [Recipes]

I’m always on the lookout for easy and quick recipes – so when I found this recipe for Hello Dolly Cookies, I knew I needed to try it.  First of all, my grandmother’s name is Dolly! Obviously, I was meant to make these cookies and call them Hello Nanu!  But these cookies also contain my all time favorite ingredients: dark chocolate, pecans, and coconut. Mmmmm. I ended up adding peanut butter chips which wasn’t in the original recipe, because I’m awesome like that.

So let’s make some Hello Nanu Cookies, shall we?

Ingredients:

  • 1 stick of unsalted butter
  • 1.5 cups of graham cracker crumbs
  • 1.5 cups of cups of semi-sweet chocolate chips
  • 1 cup of peanut butter chips
  • 1 cup of shredded sweetened cocunut
  • 1 cup of pecans, coarsely chopped
  • 1/3 cup of sweetened condensed milk

1. Preheat your oven to 350 degrees.

2. Pulse about 8 graham cracker sheets in a food processor to make your graham cracker crumbs.

3. Place the butter cut into pieces in a bowl and microwave until melted.

4. Mix the graham cracker crumbs and the melted butter and press into the bottom of a 8×8 pan.

5. First layer coconut, then chopped pecans, then peanut butter chips, and finally chocolate chips on the graham cracker crust.

6. Drizzle sweetened condensed milk over the mixture.

7. Bake in the oven for 25 minutes or until the top is light brown.

8. Let the cookies cool, and then refrigerate for at least an hour before cutting.

Ta-da! You have these gorgeous, decadent cookies, that look more complicated than they are! The different textures and the mix of salty and sweet is scrumptious! I hope you’ll make some soon!

Whoopie Pies [Recipes]

This Valentine’s Day make some whoopie . . . pies.

Happy Valentine’s Day Y’all!  In honor of this most chocolatey of holidays I thought I’d share this Whoopie Pie recipe.  It involves a cake-like cookie and a yummy frosted filling – both fun to make and eat! Before you start making whoopie, this is what you’ll need:

Ingredients:

For the Chocolate Cookie Part:

  • 1/2 cup (1 stick) of unsalted butter at room tempature
  • 1 cup of sugar
  • 1 and a half teaspoons of baking soda
  • 1/2 teaspoon of baking powder
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1/2 cup unsweetened cocoa poder
  • 1 cup of milk
  • 2 cups of all purpose flour

For the Filling

  • 1 cup (2 sticks) of unsalted butter at room temperature
  • 3 cups of confectioner’s sugar
  • 2 cups of Marshmallow Fluff
  • 1 tablespoon of vanilla extract

1. First preheat your oven to 375 degrees and lightly spray two cookie sheets.

2. In a large bowl, beat the butter sugar, baking soda, and baking powder until light.  Then mix in the egg, vanilla, and cocoa.  Then add the milk and flour and beat until smooth.  It should look something like this.

2. Drop tablespoonfuls of the batter on your cookie sheets about 2 inches apart.

3. Bake in the center of the oven for 7-8 minutes. Set aside and let them cool.

4. To make the filling, combine the butter, sugar, marshmallow cream, and vanilla until smooth.

5. To make the whoopie pies, spread about 2 tablespoonfuls of the filling on the bottom of one cookie, and sandwich it with another cookie.

When making whoopie, it’s never a bad idea to give a little squeeze!

6. Repeat with the rest of the cookies.
